Saigon cinnamon has a strong cinnamon flavor and a deep brown rich hotness obtained from the inner bark of several tree species.
Mainly used as an aromatic condiment and flavoring additive in cooking, baking, tisane, as well as, crafting, potpourri and as a mulling spice. 
It has a (higher) 5% oil content which is a principal component that derives the aroma and flavor of cinnamon.
